This week’s French Fridays with Dorie is indeed an onion biscuit. I liked these a lot. I made a half recipe and only seemed to have gotten seven biscuits, but I may have made mine a little big. Another item of note — I used red onion. I think that’s it. Oh, and they had a delightfully crunchy exterior.
If I try these again, I think they would be great with green onions too.
Here’s a link to everyone’s posts and my photos below. Good night.*
Sauteed red onions.
Onions, flour, butter…almost dough.
Patted out on top a floured board.
Before baking.
Light inside, crunchy outside.
* So here was my day yesterday: up at 6:30 AM, work at 8:00. I left early to go to a bread baking class at 4:00PM taught by Tim Healea at Bob’s Red Mill, then I had a Thursday night pottery class to go to right after baking class. Finally home at 8:30 PM. What a crazy day!
The red onion adds a little visual flair. I like it!
I wasn’t expecting the onion to have such a big impact, but it did.
It makes me happy when biscuits have that perfectly crusty outside, but the “melt in your mouth” crumb.
Good idea about the green onions! I will definitely do that some time. Your biscuits look great!
Looks wonderful and so delicious. I love the onion flavor and I am sure we could try adding different flavors too. Mine did not get quite so fluffy, but they were still tasty.
Kara: Thanks! I actually just used red onion because that’s all I had, but it turned out really well!
Cher: I know, isn’t that awesome?! They weren’t super flakey, but the inside was quite buttery and good.
Maggie: Thanks! Yep, I think I’m definitely going to try green onions next.
nana: Thanks! I was kind of surprised they poofed as much as they did, I typically make pretty flat biscuits 😉
Yours look great! I wish I had gotten the crunch exterior also!
That first picture is mouth-watering. Looks delish!
Your biscuits look wonderful. Like the red onion. You are so lucky to be able to go to a bread baking class at Bob’s Red Mill.
What a crazy and creative day you had – pottery and baking classes! Awesome! The biscuits look light, fluffy and utterly delicous. Red onion is my preferred onion.
Might have been a crazy day, but it sounds like lots of fun!
I thought I had a half of a red onion in the fridge and was going to use that, but I didn’t. I’m glad to know it worked out well, as I might try that another time.
Sounds like we both have crazy lives! Makes for a more interesting day, right? Your biscuits look great!
That is a gorgeous biscuit picture!
Beautiful biscuits! Love your first photo! I would definitely give green onions a try next time!
I liked your bigger biscuit. And, the carmelized red onions made a pretty biscuit. Wish I could have gone to the bread baking class with you. Pottery, not so much.
Preferring foods with texture I know I would love the red onion. I love the way they ‘punctuate’ your biscuits! Great job!
