I have been wanting to do something with the lavender we having growing in the backyard for quite some time. I was finally motivated (and feeling better!) Sunday, so I did. These turned out pretty well!
Lemon & Lavender Scones
Makes 12 Scones
1 1/2 Cups AP Flour
1/4 Cup Sugar
1 1/4 Tsp Baking Powder
1/4 Tsp Baking Soda
1/2 Tsp Salt
Zest and Juice of 1/2 Lemon
5 tbsp butter
1/2 Tsp lavender
1/2 Cup + 1 Tbsp Milk
Preheat oven to 375 F. Blend together flour, baking powder, sugar, baking soda,
salt, lemon zest and lavender. Cut in butter until the texture resembles a coarse
meal. Mix together lemon juice with the milk and add to the scone
mixture. Combine until dough just comes together.
On a lightly floured surface, shape dough into a disc shape (w/ about an
8 inch diameter), leaving the center slightly higher. I use a pizza cutter and just slice the disc into eight pieces (just like a pizza). Place scones on a parchment-lined baking sheet. Brush with remaining tablespoon of milk and sprinkle the tops lightly with some sugar. Bake for about 20 minutes or until lightly golden on top.

In other news, we ended up not making it to the Bite of Oregon — now that I am feeling better, jwa is sick. I guess it’s just as well, as it was about 96 degrees out yeteserday and I tend to melt in weather above 82…
I think my next lavender project is a lavender lemondrop! Mmmm!
These made me sooooo hungry this afternoon. I’ve only made scones once using a recipe from the “friends” cookbook. It is something I inherited when I got the guy and the dog 🙂 good stuff though.
Here’s another use for your lavender:
Christy’s favorite 2005 summer drink
The Bees Knees
1/3C hot water
1 tsp lavender
1/4C honey
6 TBL gin
2 TBL lemon juice
This makes 2 small (6 oz) drinks. Steep the lavender in the hot water for 4minutes. strain. Mix the lavendar water with the rest of the ingredients and add ice. Watch out these are potent.
I usually multiply the recipe by 12 and all of Denver is now begging for the Bees Knees.

Oh, I really want to try the Bees Knees. I need to go get some gin but there is a liquor store near work — so convenient. I think this will be my new weekend recipe to try!
bee careful! they are very strong and surprisingly good. too good if you get yourself into a social situation. we have had non-drinkers (of the day) say, “no thanks, well, ok, maybe one, and they end up wobbling around like weebles. is it time for a BK yet? Bees Knees, the new Gin and Tonic! glad you are feeling better. if you need an extra health push, this is the drink to better health.
p.s. how do you guys make those little happy faces?
I own and operate a ladies craft retreat. These scones are a Rose Corner Inn favorite. I have had ladies who claimed to dislike scones until they tried these. Plan to try basil next. Thank you for a great treat.
